  • 1 cup jasmine rice Rinsed under cold water.
  • 1 teaspoon salt
  • 1 can (13.5 oz) coconut milk Choose full-fat or light for different richness.
  • 2 cups vegetable broth (or water)
  • 1 tablespoon vegetable oil For sautéing.
  • 1 small onion, finely chopped
  • 1 medium bell pepper (red, yellow, or green), chopped
  • 1 cup mixed vegetables (carrots, peas, corn, etc.)
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional for heat)
  • to taste Fresh cilantro for garnish (optional)

Instructions
 

Preparation

  • Rinse the jasmine rice under cold water until the water runs clear.
  • In a medium saucepan, combine the rinsed rice, salt, coconut milk, and vegetable broth. Bring to a boil over medium-high heat.
  • Once boiling, reduce heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and has absorbed the liquid.

Cooking

  • While the rice cooks, heat vegetable oil in a large skillet over medium heat. Add chopped onion and bell pepper, sauté for about 5 minutes until onions are translucent.
  • Add mixed vegetables to the skillet and stir to combine. Sprinkle in garlic powder, ginger powder, black pepper, and red pepper flakes. Cook for an additional 5-7 minutes until vegetables are tender.
  • Fluff the cooked rice with a fork and add it to the skillet with the vegetables. Mix everything well, adjusting seasoning if necessary.
  • Allow rice to warm through for another couple of minutes, ensuring it’s fully combined and heated.
  • Remove from heat and garnish with fresh cilantro if desired. Serve warm.

Notes
