Cook the elbow macaroni according to package instructions until al dente, then drain and set aside.
In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute to create a roux.
Slowly whisk in the milk, stirring consistently until the mixture thickens. Remove from heat and mix in the cheddar and mozzarella cheeses until melted and creamy.
In a large mixing bowl, combine the cooked macaroni, cheese sauce, diced chicken, honey, cracked black pepper, salt, and paprika (if using). Stir until well combined.
Transfer the mixture into a greased baking dish. If desired, sprinkle breadcrumbs on top for added crunch.
Bake for 25-30 minutes, or until the top is golden brown and bubbly.
