Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 1/2 cup butter, softened Room temperature
  • 1 cup sugar
  • 2 large eggs Room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Filling

  • 1 cup mixed berries (blueberries, raspberries, strawberries) Fresh or thawed frozen berries

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease your loaf pan.
  • In a large mixing bowl, cream together the softened butter and sugar until light and fluffy, about 3-5 minutes.
  • Add the eggs one at a time, mixing well after each addition.
  • Mix in the vanilla extract and milk until smooth.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually fold the dry ingredients into the wet mixture until just combined.
  • Gently fold in the mixed berries.
  • Pour the batter into the greased loaf pan and smooth the top.

Baking

  • Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the loaf to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to 2 days, or refrigerate for up to a week. Can also be frozen for up to 3 months.
