Ingredients
  

For the crust

  • 1 piece pre-made pie crust or tart shell

For the custard filling

  • 1 cup heavy cream
  • 1 cup whole milk
  • 3 large eggs
  • 1/2 cup honey
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

For the topping

  • 1 cup fresh strawberries, hulled and sliced
  • Optional: fresh mint leaves for garnish

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Place the pie crust in a tart pan and press it tightly against the edges. Poke the bottom with a fork to prevent bubbling.
  • In a mixing bowl, whisk together the heavy cream, whole milk, eggs, honey, vanilla extract, and salt until the mixture is smooth and well combined.
  • Pour the custard filling into the prepared tart shell, filling it no more than three-quarters full to allow for expansion while baking.

Baking

  • Bake the tart in the preheated oven for about 30-35 minutes or until the custard is set and slightly golden around the edges.
  • Remove the tart from the oven and let it cool in the pan for about 10 minutes. Carefully remove the tart shell from the pan and let it cool completely on a wire rack.

Topping and Serving

  • Once cooled, arrange the sliced strawberries evenly on top of the custard. Drizzle a little honey over the strawberries for added sweetness and shine.
  • Place the tart in the refrigerator for at least 2 hours before serving to set completely.

Notes

To store, allow to cool completely at room temperature and then cover. Can be stored in the refrigerator for up to three days. Add strawberries just before serving to maintain their freshness.
