  • 1 lb chicken breasts Lean meat for protein
  • 1 can black beans, drained Provides fiber and texture
  • 1 can kidney beans, drained Another source of fiber and protein
  • 1 can diced tomatoes Include juices for flavor
  • 1 onion, diced Adds sweetness and flavor
  • 2 cloves garlic, minced Enhances taste and aroma
  • 1 bell pepper, diced bell pepper, diced Adds color and nutrition
  • 2 cups chicken broth Base for the chili
  • 1 tablespoon chili powder Primary seasoning
  • 1 teaspoon cumin Adds warmth and depth
  • to taste Salt and pepper Season according to preference

Instructions
 

Preparation

  • Place the chicken breasts at the bottom of your slow cooker.
  • Add the black beans and kidney beans.
  • Pour in the can of diced tomatoes with juices.
  • Dice the onion, mince the garlic, and chop the bell pepper and add them to the slow cooker.
  • Pour in the chicken broth.
  • Sprinkle in the chili powder, cumin, salt, and pepper.
  • Stir everything together to distribute spices evenly.

Cooking

  • Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.
  • Once the cooking time is up, remove the chicken and shred it with two forks directly in the pot.
  • Stir to combine the shredded chicken with the chili.

Serving

  • Ladle the chili into bowls and serve with desired toppings.

Notes

For extra flavor, sauté onions and garlic before adding to the slow cooker. Freeze leftovers for quick meals later.
