Main Ingredients

  • 2 1/2 lbs boneless (skinless chicken breasts) Use high-quality chicken for the best flavor
  • 1/2 cup balsamic vinegar Adjust to taste
  • 1/2 cup low-sodium chicken broth Use to control saltiness
  • 1 medium onion, thinly sliced Adds sweetness and flavor
  • 1 can diced tomatoes (14.5 oz), drained Adds moisture and acidity

Seasonings

  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt Adjust to taste
  • 1/4 teaspoon black pepper

Garnish

  • to taste chopped fresh parsley For garnish before serving

Instructions
 

Preparation

  • In a small bowl, combine the Italian seasoning, garlic powder, salt, and black pepper.
  • Lay the chicken breasts in the insert of your slow cooker and sprinkle the seasoning mixture evenly over them.
  • Scatter the sliced onion over the chicken.
  • Draining the can of diced tomatoes, pour the tomatoes over the chicken and onions.
  • Add the balsamic vinegar and chicken broth to the slow cooker.

Cooking

  • Cover the slow cooker and cook on low for 5 to 6 hours or on high for 2 1/2 to 3 hours until the chicken is cooked through and tender.

Serving

  • Once the cooking time is complete, serve the chicken hot and garnish with freshly chopped parsley.

Notes

Store leftovers in an airtight container for 3-4 days in the fridge or freeze for up to 3 months. Reheat with a splash of broth to keep it moist.
