Ingredients

  • 1 sheet frozen puff pastry thawed according to package directions
  • optional egg wash: 1 egg beaten with 1 tablespoon water
  • 1/4 cup sauce tomato sauce, white sauce, pesto, BBQ sauce, etc.
  • 1 cup shredded mozzarella or cheese of choice or just measure with your heart!
  • pizza toppings of choice see notes for some ideas

Instructions

Step 1: Preheat Your Oven

  • Start by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking and make cleanup a breeze.

Step 2: Prepare the Puff Pastry

  • Carefully roll out the thawed puff pastry on a lightly floured surface. Use a sharp knife to cut it into squares or rectangles, depending on your preferred portion size.

Step 3: Create a Border

  • For a defined crust, score a 1/2-inch border around each square without cutting through the pastry. Poke the center with a fork to keep it from puffing unevenly.

Step 4: Apply Egg Wash (Optional)

  • Brush the tops with an egg wash if you want a glossy, golden finish.

Step 5: Prebake the Pastry

  • Bake the puff pastry squares for 8–10 minutes or until they’re lightly golden. Remove from the oven and gently press down the centers to create a flat area for the toppings.

Step 6: Add Toppings

  • Spread a thin layer of your chosen sauce over each pastry, keeping it within the borders. Sprinkle cheese generously and add your selected toppings.

Step 7: Bake to Perfection

  • Return the pastries to the oven for another 10–12 minutes, or until the cheese is melted and bubbly. Let cool slightly before serving.
