In a large mixing bowl, combine Greek yogurt, olive oil, lemon juice, soy sauce, grated garlic, onion powder, smoked paprika, dried dill, oregano, salt, and black pepper to create the marinade.
Drain and press the tofu to remove excess moisture, then cut it into bite-sized pieces.
Add the tofu pieces to the marinade and toss gently until well coated.
Arrange the marinated tofu in a single layer on a lined baking sheet.
Bake in the preheated oven for 30 minutes, turning halfway through, until the tofu is golden brown.
Remove from the oven and serve warm or let cool before storing.
