  • 1/4 teaspoon salt Balances the sweetness and brings out other flavors.

Filling and Topping

  • 1/2 cup strawberry jam The sweet filling that gives these cookies their signature taste.
  • to taste cup powdered sugar for dusting Adds a lovely finishing touch.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the softened butter and powdered sugar. Beat together until light and fluffy.
  • Add the vanilla and almond extracts, mixing them into the butter-sugar mixture.
  • Gradually incorporate the all-purpose flour and salt until a soft dough forms. Avoid overmixing.
  • Dust your countertop with flour and roll out the dough to about 1/8 inch thickness.
  • Use a cookie cutter to cut shapes from the rolled-out dough, cutting smaller shapes in the center for half of the cookies.
  • Place the cut cookies on a baking sheet lined with parchment paper, leaving space between them.

Baking

  • Transfer the baking sheet to the preheated oven and bake for 10-12 minutes, or until lightly golden.
  • Let the cookies cool completely on a wire rack.

Assembly

  • Spread a generous layer of strawberry jam on the whole cookies.
  • Place the cut-out cookies on top of the jam-covered ones to create sandwiches.
  • Dust the assembled cookies with powdered sugar before serving.

Notes
