Ingredients
  

Cookie Base

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Peach Filling

  • 1 cup fresh peaches, peeled and mashed Use ripe but firm peaches.
  • 1/2 teaspoon almond extract Can substitute with orange blossom water for a floral note.

Topping

  • as needed Powdered sugar, for dusting Dust before serving.

Instructions
 

Preparation

  • Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  • In a large bowl, cream the softened butter and granulated sugar together until light and fluffy.
  • Add the egg and vanilla extract to the mixture, then mix until well combined.
  • In another bowl, combine the all-purpose flour, baking powder, and salt. Gradually add this dry mixture to the wet mixture, stirring until a dough forms.
  • Fold in the mashed peaches and almond extract to incorporate the fruit evenly throughout the dough.
  • Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about two inches apart.

Baking

  • Bake in the preheated oven for 12 to 15 minutes or until the edges are golden brown.
  • Remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  • Dust the cooled cookies with powdered sugar before serving.
