  • 2 lbs chicken breast (raw) Use high-quality, fresh chicken for best results.
  • 1 cup chicken broth (or water) Broth adds richness; using water is acceptable if enhanced with spices.
  • 1 tsp kosher salt
  • 1/2 tsp pepper
  • 1/2 tsp smoked paprika
  • 1 tsp oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder

Preparation

  • Place the raw chicken breast into the Instant Pot, spreading them out evenly at the bottom.
  • Pour in the chicken broth or water, followed by the kosher salt, pepper, smoked paprika, oregano, garlic powder, and onion powder. Stir gently to distribute the seasonings.
  • Close and seal the lid of the Instant Pot, ensuring the steam release handle is set to the sealing position.

Cooking

  • Select the manual option and set the pressure to high for 10 minutes.
  • Once cooking time is complete, allow the Instant Pot to naturally release for 8-10 minutes.
  • If there’s any remaining pressure, perform a quick release by turning the steam release handle to the venting position.

Shredding

  • Carefully remove the chicken breasts from the pot with about 1 cup of broth.
  • Place the chicken in a bowl and shred it using two forks or a hand mixer.
  • Pour the reserved broth over the shredded chicken to enhance flavor and moisture.

Notes

Feel free to adjust seasonings to match your preferences. Make sure to let the chicken rest after cooking for maximum juiciness. Store leftovers properly for continued enjoyment.
