Instructions
Heat a large skillet over medium-high heat. Season chicken thighs with salt and pepper.
Cook chicken for 3-5 minutes on the first side until golden brown, then flip and cook for another 5-7 minutes until cooked through. Remove from the pan and set aside.
Reduce heat to medium-low and add diced onions and minced garlic to the pan. Sauté for about 1 minute until fragrant.
Pour in soy sauce and honey, scraping the bottom of the pan to mix in the browned bits.
Return the chicken to the skillet, coating it with the sauce. Simmer until the sauce thickens and chicken reaches an internal temperature of 165°F.
Garnish with chopped green onions and toasted sesame seeds before serving.

Notes
