Ingredients

  • 2 cans minced clams (6.5 oz each)
  • 2 cups diced potatoes
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 4 cups clam juice (or fish stock)
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

Preparation

  • Melt the butter in a large pot over medium heat.
  • Add the chopped onions and celery, sauté until tender and fragrant (about 5 minutes).
  • Stir in the diced potatoes and clam juice, bring to a boil.
  • Reduce heat and let the mixture simmer for approximately 15 minutes until potatoes are tender.
  • Add minced clams and heavy cream, stir well to combine. Heat through without boiling.
  • Season the chowder with salt and pepper according to taste and serve.

Notes
