Ingredients
  

  • 2 large eggs
  • 1/2 cup melted coconut oil or olive oil
  • 1/3 cup honey or maple syrup
  • 1/4 cup milk or Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas about 2-3 medium bananas
  • 1 3/4 cups white whole wheat flour or regular whole wheat flour
  • 1/2 teaspoon ground cinnamon optional
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup dark chocolate chips, chopped walnuts, or raisins optional

Instructions
 

  • Preheat your oven to 325°F (163°C) and lightly grease a 9×5-inch loaf pan.
  • In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.
  • In a large bowl, beat the eggs until frothy. Add melted coconut oil, honey or maple syrup, milk, and vanilla. Mix until smooth.
  • Mash the ripe bananas and stir them into the wet mixture.
  • Gently fold the dry ingredients into the wet ingredients until just combined. If adding mix-ins, fold them in now.
  • Pour the batter into the prepared loaf pan and sprinkle with cinnamon or toppings, if desired.
  • Bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean.
  • Allow the bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
