mashed ripe bananas
about 2-3 medium bananas

white whole wheat flour or regular whole wheat flour

dark chocolate chips, chopped walnuts, or raisins

Instructions
Preheat your oven to 325°F (163°C) and lightly grease a 9×5-inch loaf pan.
In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.
In a large bowl, beat the eggs until frothy. Add melted coconut oil, honey or maple syrup, milk, and vanilla. Mix until smooth.
Mash the ripe bananas and stir them into the wet mixture.
Gently fold the dry ingredients into the wet ingredients until just combined. If adding mix-ins, fold them in now.
Pour the batter into the prepared loaf pan and sprinkle with cinnamon or toppings, if desired.
Bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean.
Allow the bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
