  • 2 pounds baby potatoes
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Preparation

  • Preheat your oven to 400°F (200°C).
  • Boil the baby potatoes in a large pot filled with salted water until fork-tender, about 15-20 minutes.
  • Drain and cool the potatoes for a few minutes. Place them on a baking sheet lined with parchment paper.
  • Gently smash each potato with the back of a fork or a potato masher.
  • Drizzle olive oil over the smashed potatoes and sprinkle with minced garlic, grated Parmesan, salt, and pepper.
  • Bake in the preheated oven for 25-30 minutes until crispy and golden brown.
  • Garnish with fresh chopped parsley before serving.

Notes

These potatoes can be stored in an airtight container in the refrigerator for 3-4 days. Reheat them in the oven at 350°F (175°C) for best results.
