Fluffernutter Bars are a delicious dessert combining peanut butter and marshmallow fluff in a soft, chewy base, perfect for gatherings or as a sweet snack.

Ingredients
  

Base Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/3 cup white sugar
  • 1 1/2 cups smooth peanut butter
  • 1 large egg
  • 1 large egg yolk

Topping Ingredients

  • 7 oz jar marshmallow fluff

Instructions
 

Preparation

  • Preheat your oven to 350°F and place the oven rack in the middle.
  • Line a 9x13 inch baking pan with parchment paper or aluminum foil and lightly grease it.
  • In a medium bowl, whisk together the flour, baking powder, and salt.
  • In a large mixing bowl, beat the softened butter with the brown sugar and white sugar until fluffy.
  • Add the smooth peanut butter to the mixture and beat until well blended and smooth.
  • Mix in the large egg and egg yolk until fully combined.
  • Gradually fold the flour mixture into the wet ingredients until just combined.
  • Set aside about 1 cup of the batter and press the rest evenly into the bottom of the prepared pan.

Baking

  • Bake the base for about 25 minutes or until lightly golden.
  • Spread the marshmallow fluff evenly over the baked base.
  • Pinch off pieces of the reserved batter and scatter it over the fluff.
  • Return to the oven and bake for an additional 10 minutes.

Cooling

  • Let the bars cool for at least an hour before slicing into squares.

Notes

Store leftovers at room temperature for up to three days in an airtight container. For longer storage, refrigerate for up to a week or freeze for up to three months.
