Ingredients
  

For the Lasagna

  • 1 lb ground beef or Italian sausage (or turkey/plant-based crumbles)
  • 24 oz pasta sauce (marinara or your favorite flavor)
  • 9-12 pieces uncooked lasagna noodles (regular or oven-ready)
  • 2 cups ricotta cheese (or cottage cheese)
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese plus extra for serving
  • 1 large egg
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon garlic powder
  • to taste Salt and pepper
  • 1 cup chopped spinach (optional) for added nutrition
  • 1/2 cup diced mushrooms (optional)
  • 1/2 cup chopped bell pepper (optional)
  • to taste Fresh basil leaves (for serving)

Instructions
 

Preparation

  • Heat a large skillet over medium heat. Add the ground beef or Italian sausage and cook for about 6 to 8 minutes, breaking it up as it browns. Season with salt and pepper. If adding vegetables, include them in the last few minutes of cooking. Drain excess fat.
  • In a mixing bowl, combine the ricotta cheese, egg, Italian seasoning, garlic powder, and half of the Parmesan cheese. Stir until smooth and well combined.

Layering and Cooking

  • Spray the inside of the crockpot with non-stick spray or olive oil. Spread about 1 cup of pasta sauce on the bottom.
  • Place 3 to 4 uncooked lasagna noodles over the sauce, breaking them if necessary.
  • Top the noodles with one-third of the cooked meat, followed by one-third of the cheese mixture and approximately 2/3 cup of shredded mozzarella.
  • Repeat the layering: sauce, noodles, meat, cheese, and mozzarella until all ingredients are used, finishing with sauce, mozzarella, and Parmesan on top.
  • Cover the crockpot and cook on LOW for 4 to 5 hours or HIGH for 2 to 2.5 hours until edges are bubbly and cheese is melted.
  • Let the lasagna rest for about 15 to 20 minutes with the lid off before slicing and serving.
