Ingredients
  

Main Ingredients

  • 2 lbs chicken breasts Boneless, skinless
  • 1 can (14.5 oz) fire-roasted tomatoes For moisture and flavor
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 red onion, sliced

Seasoning

  • 2 tablespoons fajita seasoning For authentic flavor
  • to taste salt and pepper Adjust according to preference

For Serving

  • pieces Tortillas For serving, can use corn or flour

Instructions
 

Preparation

  • Place the chicken breasts at the bottom of the crockpot, evenly spaced.
  • Pour the fire-roasted tomatoes directly over the chicken.
  • Add the sliced red and green bell peppers and red onion.
  • Sprinkle the fajita seasoning over the ingredients.
  • Season with salt and pepper to taste.
  • Gently stir the ingredients to ensure they are well-coated with seasoning.

Cooking

  • Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
  • Shred the chicken in the pot using two forks and mix all the ingredients together.

Serving

  • Spoon the chicken fajita mixture into warm tortillas.
  • Serve with your choice of toppings such as cheese, sour cream, guacamole, salsa, lettuce, and tomatoes.

Notes

For added spice, consider including jalapeños or cayenne pepper. Remember not to overcrowd the crockpot for even cooking. Allow the fajitas to sit in the juices before serving to meld the flavors.
