Ingredients
  

Main Ingredients

  • 5-6 pieces chicken thighs protein-packed
  • 4 cups broccoli florets, cooked fiber-rich
  • 4 cups white rice, cooked fluffy base
  • 1/2 cup sour cream adds creaminess
  • 1/3 cup Boursin cheese flavors the sauce
  • 1 1/2 cup cheddar cheese, mild or medium for topping and sauce

Flavoring Ingredients

  • 2 tbsp unsalted butter for cooking
  • 1 tbsp olive oil for chicken seasoning
  • 4 cloves garlic, minced adds aroma
  • 1/4 cup chicken stock to deglaze pan
  • 1 can (10.5 oz) cream of chicken with herbs base of the sauce
  • 1 can (10.5 oz) heavy cream adds richness
  • 3 tbsp Bayou City all-purpose seasoning, divided for seasoning
  • 1 tbsp Bayou City garlic pepper
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper optional for heat

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, melt 2 tablespoons of unsalted butter over medium heat.
  • Season the chicken thighs with olive oil and 2 tablespoons of Bayou City all-purpose seasoning. Cook in the skillet for about 6-7 minutes on each side until thoroughly cooked.
  • Remove chicken and let cool slightly, then shred or chop into smaller pieces.
  • In the same skillet, sauté minced garlic for about 2 minutes. Pour in chicken stock and let it simmer for about 4 minutes. Stir in cream of chicken soup, heavy cream, Boursin cheese, and 1/2 cup cheddar cheese until melted and smooth. Mix in sour cream.

Assembly and Baking

  • In a large mixing bowl, combine the cooked rice, cooked broccoli, and shredded chicken. Fold in the cheese sauce until everything is well coated. Add remaining seasoning, onion powder, cayenne pepper, and salt and pepper to taste.
  • Transfer the mixture into a greased casserole dish. Sprinkle the remaining cheddar cheese on top.
  • Cover with foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes until the top is bubbly and golden brown.
  • Once done, let it cool slightly before serving.

Notes

Pair the casserole with a light salad or crusty bread. Garnish with fresh herbs for a pop of color. Store leftovers in airtight containers in the refrigerator for 3-4 days or freeze for up to 2 months.
