  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt or to taste
  • ½ teaspoon black pepper
  • 1 cup diced vegetables (like carrots, bell peppers, or onions)
  • Fresh herbs for garnish (optional)

Preparation

  • Ensure your crockpot is clean and ready for use.
  • Place the boneless, skinless chicken breasts at the bottom of the crockpot.
  • Pour in the chicken broth for moisture and flavor.
  • In a small bowl, mix the olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper to create a seasoning blend.
  • Drizzle the seasoning mix over the chicken, ensuring each piece is well coated.
  • Layer diced vegetables on top of the chicken.
  • Cover the crockpot with its lid and set it to cook on low for 6 to 8 hours or high for 3 to 4 hours.

Finishing

  • Check the internal temperature of the chicken to ensure it reaches 165°F (74°C). If not, cook for another 15-30 minutes.
  • Once cooked, shred the chicken with two forks directly in the crockpot, mixing it with the broth and vegetables.
