  • 8 cups water (divided) 4 cups for boiling, 4 cups for sugar syrup
  • 4 small oranges (such as tangelos) Fresh and juicy oranges enhance flavor
  • 4 cups granulated sugar (plus more for coating) Traditional sugar; alternatives can be used for variations

Instructions
 

Preparation

  • Fill a large bowl with ice water for cooling the orange slices after boiling.

Boiling

  • In a large saucepan, bring 4 cups of water to a vigorous boil.
  • Carefully add the orange slices to the boiling water and cook for 2 minutes.

Cooling

  • Transfer the boiled orange slices to the ice water immediately using a slotted spoon.
  • Discard the water used for boiling.

Sugar Syrup Preparation

  • In the same saucepan, combine the remaining 4 cups of water with granulated sugar.
  • Stir occasionally while bringing the mixture to a boil over medium heat until the sugar dissolves completely.

Simmering

  • Reduce heat to medium-low and carefully add the boiled orange slices into the syrup.
  • Allow them to simmer for 45 to 60 minutes, swirling gently every 15 minutes until rinds are slightly translucent.

Cooling and Drying

  • Use a slotted spoon to lift the orange slices from syrup and place them on a cooling rack over a baking sheet.
  • Let slices cool and dry for up to 24 hours.

Optional Coating

  • For added sweetness and aesthetic, dip cooled slices in granulated sugar before serving.

Notes

Store candied orange slices in an airtight container in the refrigerator for up to a month. For longer storage, separate layers with parchment paper and freeze.
