  • 1 medium butternut squash, peeled and cubed (about 4 cups)
  • 3 pieces firm apples, cored and sliced Choose varieties that hold their shape
  • 3 tablespoons butter (or coconut oil for dairy-free)
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon maple syrup (optional)
  • 1 pinch salt
  • 1 pinch pepper

Preparation

  • Preheat your oven to 375°F (190°C).
  • Grease a 9x13-inch baking dish.
  • Melt the butter or coconut oil in a small bowl.
  • In a large bowl, combine cubed butternut squash and sliced apples.
  • Drizzle melted butter over the mixture, and sprinkle in cinnamon, nutmeg, salt, and pepper. If using maple syrup, add it now.
  • Toss everything together gently until the squash and apples are evenly coated.
  • Spread the mixture in the prepared baking dish in an even layer.

Baking

  • Place the dish in the preheated oven and bake for 40 to 45 minutes.
  • Stir the mixture halfway through to ensure even cooking and browning.
  • Once bubbly and the squash is fork-tender, remove from the oven and let cool for a few minutes before serving.
