  • 1 whole chicken cut in half
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 tablespoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 tablespoon brown sugar
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions
 

Prepare the Chicken:

  • Cut the whole chicken in half through the breastbone to ensure even cooking. You can ask your butcher to do this if preferred.

Marinate the Chicken:

  • In a bowl, mix olive oil, garlic, paprika, cumin, turmeric, brown sugar, lemon juice, salt, and pepper. Coat the chicken halves thoroughly with the marinade and let it sit in the fridge for at least 2 hours (overnight for better flavor).

Preheat the Oven:

  • Preheat your oven to 375°F (190°C) while the chicken marinates.

Roast the Chicken:

  • Place the marinated chicken on a baking sheet, skin side up. Roast for about 45 minutes or until the skin is golden and the internal temperature reaches 165°F (74°C).

Rest the Chicken:

  • Let the chicken rest for 10 minutes before carving to keep it juicy and flavorful.
