Ingredients
  

  • 16 oz bowtie pasta
  • 1 bottle Italian dressing
  • 5-6 cups vegetables such as cherry tomatoes, broccoli, bell peppers, chopped
  • 1 lb salami chopped
  • 1 cup shredded Parmesan cheese
  • 1/4 cup fresh chopped basil or parsley optional
  • Kosher salt to taste
  • Fresh ground pepper to taste

Instructions
 

  • Bring a large pot of salted water to a boil. Add the bowtie pasta and cook according to package instructions until al dente, about 8-10 minutes.
  • Prepare an ice water bath in a large bowl. Once the pasta is cooked, drain it and immediately dunk it into the ice water bath for 30 seconds.
  • Drain the pasta again and transfer it to a large mixing bowl.
  • Pour the Italian dressing over the warm pasta and toss to combine.
  • Add the chopped vegetables, salami, and shredded Parmesan cheese to the bowl. If using, add fresh herbs as well.
  • Toss everything together until well combined. Season with kosher salt and fresh ground pepper to taste.
  • Cover the bowl and refrigerate for at least one hour to allow the flavors to meld.

Notes
