Matcha brownies combine the rich, fudgy texture of traditional brownies with the unique, earthy flavor of matcha. These vibrant green treats are made with browned butter, white chocolate, and a perfect balance of sweetness and matcha bitterness.
Preheat the oven to 350°F (175°C). Grease an 8x8-inch baking pan with butter and line it with parchment paper, leaving extra on the sides for easy removal.
Step 2: Brown the Butter
Place the butter in a light-colored saucepan and melt it over medium heat. Stir occasionally until golden brown bits form at the bottom, signaling it’s ready. Remove from heat to prevent burning.
Step 3: Make Matcha Ganache
In a heatproof bowl, combine white chocolate and matcha powder. Pour the hot browned butter over the mixture and whisk until smooth. Set aside to cool slightly.
Step 4: Whip Eggs and Sugar
Beat granulated sugar, brown sugar, and eggs together in a large mixing bowl for 5-8 minutes until the mixture becomes thick and pale, creating an airy texture.
Step 5: Combine Wet Ingredients
Gradually add the matcha ganache to the egg mixture while whisking, ensuring the batter turns a smooth, uniform green.
Step 6: Fold in the Dry Ingredients
Sift in the flour to avoid lumps. Gently fold the flour into the batter with a spatula, being careful not to overmix.
Step 7: Bake to Perfection
Spread the batter into the prepared pan, ensuring the top is even. Bake for 20-25 minutes, then gently tap the pan to release air bubbles. Sprinkle flaky sea salt on top, if desired, and bake for an additional 10 minutes.
Step 8: Cool and Serve
Let the brownies cool for a minimum of 20 minutes before slicing. For the most delicious taste, enjoy them either warm or at room temperature.
