Ingredients
  

  • 1 lb beef sirloin or rib-eye
  • 2 tbsp olive oil
  • 1 medium onion thinly sliced
  • 3 cloves garlic minced
  • 1 cup beef broth low sodium
  • 1 tbsp soy sauce
  • 1 tsp dried thyme
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp fresh parsley chopped (for garnish)

Instructions
 

Prepare the Beef:

  • Pat the beef dry with paper towels to ensure it sears properly.
  • Season both sides with salt and black pepper.

Sear the Beef:

  • Heat the olive oil in a large skillet over medium-high heat.
  • Once the oil is hot, add the beef and sear for 3-4 minutes on each side or until it develops a golden-brown crust. Remove the beef from the skillet and set it aside.

Sauté the Aromatics:

  • In the same skillet, add the sliced onion and cook for about 2-3 minutes until softened.
  • Add the minced garlic and cook for an additional 1 minute, stirring frequently to avoid burning.

Deglaze the Pan:

  • Pour in the beef broth and soy sauce, scraping the bottom of the pan to release any flavorful browned bits.
  • Stir in the dried thyme for a fragrant boost of flavor.

Simmer:

  • Return the beef to the skillet, spooning some of the sauce over the top. Reduce the heat to low and let it simmer for about 10 minutes, or until the beef is cooked through and tender.

Finish and Serve:

  • Once the beef is done, remove it from the skillet and let it rest for a few minutes before slicing.
  • Drizzle the sauce over the beef, garnish with fresh parsley, and serve hot.
