  • 2 tablespoons olive oil or butter
  • 1.5 pounds sirloin, cubed Use high-quality meat for best flavor.
  • 0.5 pound Yukon gold potatoes, cubed
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 3 carrots diced
  • 2 celery stalks diced
  • 3 tablespoons gluten-free flour To thicken the gravy.
  • 2 cups beef stock
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 2 teaspoons salt, divided
  • 0.5 teaspoon pepper, divided
  • 1 pie crust store-bought or homemade
  • 1 egg whisked (optional) For egg wash to give a golden finish.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Heat 1 tablespoon of olive oil over medium-high heat in a Dutch oven or deep skillet.
  • Season the cubed sirloin with 1 teaspoon of salt and 1/4 teaspoon of pepper, then add to the skillet to brown for 3-5 minutes.
  • Remove the browned sirloin from the skillet and set aside.
  • Reduce the heat to medium and add another tablespoon of olive oil along with the diced yellow onion and minced garlic, sauté for 3-4 minutes until translucent.
  • Add the diced celery, carrots, and Yukon gold potatoes, sauté for about 10 minutes.
  • Sprinkle gluten-free flour over the vegetables and toss to coat.
  • Slowly stir in beef stock, balsamic vinegar, Worcestershire sauce, tomato paste, and Dijon mustard, combining thoroughly.
  • Return the browned sirloin to the skillet and add chopped rosemary, thyme, and remaining salt and pepper. Bring to a boil, then reduce heat and let simmer for about 10 minutes.
  • Once thickened, pour the mixture into a deep pie dish or a 2-quart casserole dish.
  • Lay the pie crust over the top. Optionally, brush with the whisked egg for a golden finish.

Baking

  • Bake the beef pot pie for approximately 40 minutes until the crust is golden brown.
  • Let it cool for a few minutes before serving.

Notes

Serve with a fresh salad, steamed green beans, or creamy mashed potatoes. Allow to rest before slicing for cleaner cuts.
