Wash the sweet potato under cold water and peel it if desired. Cut into ½-inch cubes.
In a mixing bowl, drizzle the cubes with olive oil (if using) and sprinkle with salt, garlic powder, paprika, onion powder, black pepper, and cumin. Toss to coat.
Preheat the air fryer to 400°F (200°C).
Arrange the sweet potato cubes in a single layer in the air fryer basket. Cook for 8 minutes, then shake the basket.
Continue cooking for another 5-7 minutes until crispy on the outside and tender inside.
Transfer to a serving bowl and toss with fresh parsley before serving.
