  • 4 medium zucchinis Washed and sliced into thin rounds
  • 1 pound ground beef or turkey Choose your preferred meat
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 ounces) tomato sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup bell peppers, diced (optional)
  • 1 cup mushrooms, sliced (optional)
  • 1/2 teaspoon crushed red pepper flakes (optional) For added heat

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C) and prepare a baking dish by lightly greasing it with cooking spray or oil.
  • Wash the zucchinis thoroughly and slice them into thin rounds.
  • In a large skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain any excess fat.
  • Add the diced onion and minced garlic to the skillet. Cook until the onion becomes translucent, stirring occasionally.
  • Stir in the tomato sauce, oregano, basil, salt, and black pepper. If adding optional bell peppers or mushrooms, mix them in as well. Allow the mixture to simmer for about 5 minutes.

Layering

  • Start layering the zucchini in the baking dish. Place half of the zucchini slices at the bottom, followed by half of the meat sauce. Sprinkle half of the mozzarella and Parmesan cheese on top.
  • Repeat the layers with the remaining zucchini, meat sauce, and cheeses.
  • If using crushed red pepper flakes for added spice, sprinkle them on top.

Baking

  • Cover the baking dish with aluminum foil and bake for 25 minutes.
  • Then remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.
  • Let it cool slightly before serving.

Notes

To prevent excess moisture, salt the sliced zucchinis before adding them to the casserole. A mix of different cheeses can elevate the flavor. Let the casserole sit for a few minutes before serving for easier slicing.
