  • 1 cup plain yogurt Use full-fat or Greek yogurt for creaminess.
  • 2 tablespoons olive oil Extra virgin preferred for better flavor.
  • 2 cloves garlic, minced Can sauté for a milder taste.
  • 1 teaspoon lemon juice Adds brightness.
  • 1 teaspoon dried oregano
  • 1 tablespoon fresh parsley, chopped Can use other fresh herbs as desired.
  • to taste salt and pepper
  • red pepper flakes (optional) Add for a kick.

Preparation

  • Gather all your ingredients to ensure a smooth cooking process.
  • In a mixing bowl, combine the plain yogurt, minced garlic, lemon juice, olive oil, dried oregano, and fresh parsley.
  • Mix well until fully blended into a creamy sauce.
  • Season the sauce with salt, pepper, and optional red pepper flakes to taste.
  • Allow the sauce to rest for a few minutes.

Cooking

  • Cook your choice of pasta according to package instructions. Drain when al dente, reserving a bit of pasta water.
  • In a large mixing bowl or pot, toss the hot pasta with the yogurt sauce, adding reserved pasta water as needed for desired consistency.
  • Serve immediately, garnished with additional fresh herbs if desired.

Notes

Store leftovers in an airtight container for up to three days. For freezing, use small portions in ice cube trays.
