Instructions
Boil a large pot of salted water and cook the pasta according to package directions until al dente. Drain and set aside.
In a separate saucepan, melt the butter over medium heat. Whisk in the flour to form a roux and cook for 1–2 minutes.
Gradually add the milk while whisking to prevent lumps. Stir until the mixture thickens and bubbles.
Reduce heat and stir in the cheddar, mozzarella, and Parmesan until smooth. Season with salt and pepper.
Add gel food coloring to the cheese sauce until desired color is achieved.
Combine the drained pasta with the cheese sauce, stirring until coated. If baking, transfer to a baking dish, top with breadcrumbs, and bake at 350°F for 10–15 minutes.
Press a black olive slice into each mozzarella ball and place on top of the mac and cheese before serving.
