Witch’s Cauldron Mac and Cheese

This spooky version of mac and cheese is creamy, cheesy, and dyed in eerie colors, topped with olive 'eyeballs' for a fun Halloween meal!

Ingredients
  

  • 1 lb pasta (elbows or Halloween-themed shapes)
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 3 cups milk (whole milk works best)
  • 2 cups shredded cheddar cheese
  • 1 cup mozzarella cheese
  • ½ cup Parmesan cheese
  • to taste salt
  • to taste pepper
  • as needed food coloring (green or purple gel works best)
  • 1 pack mozzarella balls (for eyeballs)
  • 1 cup black olive slices (for eyeballs)
  • to taste breadcrumbs (optional for topping)
  • as needed edible glitter or sprinkles (for a magical touch)

Instructions
 

  • Boil a large pot of salted water and cook the pasta according to package directions until al dente. Drain and set aside.
  • In a separate saucepan, melt the butter over medium heat. Whisk in the flour to form a roux and cook for 1–2 minutes.
  • Gradually add the milk while whisking to prevent lumps. Stir until the mixture thickens and bubbles.
  • Reduce heat and stir in the cheddar, mozzarella, and Parmesan until smooth. Season with salt and pepper.
  • Add gel food coloring to the cheese sauce until desired color is achieved.
  • Combine the drained pasta with the cheese sauce, stirring until coated. If baking, transfer to a baking dish, top with breadcrumbs, and bake at 350°F for 10–15 minutes.
  • Press a black olive slice into each mozzarella ball and place on top of the mac and cheese before serving.
