  • 200 grams pasta penne, fettuccine, or preferred shape
  • 2 tablespoons butter for richness and flavor
  • 2 tablespoons all-purpose flour to create the roux and thicken the sauce
  • 2 cups milk whole milk preferred for creaminess
  • 1 cup grated cheese Parmesan or mozzarella
  • 2 cloves garlic minced

Instructions
 

  • Bring a large pot of salted water to a boil. Add pasta and cook until al dente (8-10 minutes). Drain and set aside.
  • In a saucepan over medium heat, melt the butter. Whisk in the flour, stirring constantly for about 2 minutes to cook off the raw flour taste without browning.
  • Slowly pour in the milk while whisking continuously to avoid lumps. Keep stirring until sauce thickens, about 5-7 minutes.
  • Stir in minced garlic, salt, pepper, and a pinch of nutmeg. Let garlic infuse for a minute without burning.
  • Lower heat and gradually mix in grated cheese until melted and smooth.
  • Toss cooked pasta into the sauce, ensuring every piece is coated luxuriously.
  • Garnish with fresh herbs and serve immediately while hot and creamy.
