White Lasagna Soup

Ingredients
  

Main Ingredients

  • 1 lb Italian sausage Use spicy Italian sausage for extra flavor.
  • 1 cup onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups heavy cream Can substitute with half and half for a lighter option.
  • 8 oz lasagna noodles, broken into pieces Cook until al dente.
  • 2 cups spinach Fresh spinach is preferred.
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Italian seasoning, to taste

Instructions
 

Preparation

  • Heat a large pot over medium heat and add the Italian sausage. Brown the sausage until it’s no longer pink.
  • Stir in the chopped onion and minced garlic. Cook until the onion is soft and translucent, about 3 to 5 minutes.

Cooking

  • Pour in the chicken broth and bring to a boil. Add the broken lasagna noodles and cook until al dente.
  • Reduce heat to a gentle simmer and stir in the heavy cream, followed by the spinach, ricotta, mozzarella, and Parmesan cheeses. Stir until the cheeses melt and blend.
  • Season with salt, pepper, and Italian seasoning to taste. Simmer for 5 to 7 minutes until everything is heated through.

Serving

  • Ladle the soup into bowls and serve hot. Garnish with additional grated Parmesan and fresh herbs if desired.

Notes
