  • 1 cup heavy cream 240 ml
  • 1/2 cup powdered sugar 60 grams

Preparation

  • Begin by melting the white chocolate. Place the chopped white chocolate in a microwave-safe bowl and microwave in 20-second intervals, stirring between each until melted and smooth. Let it cool slightly.
  • In a large bowl, whip the heavy cream with the powdered sugar until soft peaks form.
  • Gently fold the mascarpone cheese into the whipped cream until well combined.
  • Add the melted white chocolate to the mascarpone mixture and fold gently until fully incorporated.
  • In a shallow dish, combine the cooled coffee and coffee liqueur, if using.
  • Dip each ladyfinger into the coffee mixture briefly and arrange a layer of soaked ladyfingers at the bottom of a 9×13 inch dish.
  • Spread a portion of the mascarpone mixture over the ladyfingers, smoothing it out evenly.
  • Scatter a layer of fresh raspberries on top of the mascarpone layer.
  • Repeat the layering process: another layer of soaked ladyfingers, followed by more mascarpone mixture and raspberries. Aim for at least three layers.
  • Finish with a final layer of the mascarpone mixture and smooth the top.
  • Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight.
  • Before serving, dust the top with cocoa powder and garnish with extra raspberries if desired.
