Preparation

  • Ensure your crockpot is clean and ready to go.
  • In the crockpot, add the shredded chicken, drained white beans, drained corn, and diced green chilies.
  • Pour in the chicken broth, and add chopped onion and minced garlic.
  • Sprinkle cumin and chili powder over the ingredients. Season with salt and pepper.
  • Stir everything to combine evenly and cover the crockpot with its lid.
  • Set the crockpot to cook on low for 6 to 8 hours or high for 4 hours.
  • About 30 minutes before serving, stir in the heavy cream or half-and-half.
  • Once ready, ladle soup into bowls and top each serving with freshly chopped cilantro.
