Ingredients
  

Base Ingredients

  • 1 lb shredded cooked chicken Using rotisserie chicken saves time.
  • 1 can white beans (cannellini or great northern)
  • 1 can diced green chilies Use mild or spicy based on preference.
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1 tsp chili powder
  • to taste Salt and pepper
  • 1 cup corn (frozen or canned)
  • 1/2 cup cream or milk (optional) For a creamier texture.

Toppings

  • Fresh cilantro For garnish.
  • Avocado For garnish.
  • Lime For garnish.
  • Cheese (optional) For garnish.

Instructions
 

Preparation

  • Heat a large pot over medium heat. Add the diced onion and minced garlic. Sauté for about 5 minutes, until the onion is translucent.
  • Stir in the shredded chicken, white beans, and diced green chilies. Mix in the chicken broth, cumin, chili powder, salt, and pepper.
  • Bring the mixture to a boil, then reduce heat to low and simmer for about 20 minutes.
  • Add the corn and, if desired, the cream or milk. Mix well and cook for an additional 5 minutes.

Serving

  • Ladle the chili into bowls and garnish with fresh cilantro, diced avocado, lime juice, and cheese.
  • Serve hot with warm bread or cornbread, if desired.

Notes

For a spicier version, add diced jalapeños or cayenne pepper.
