Ingredients
  

Vegetables and Aromatics

  • 1 tsp Olive oil
  • 1 medium Onion, yellow, chopped
  • 1 medium Bell pepper, green, chopped
  • 4 clove(s) Garlic, finely chopped
  • 1 medium Jalapeño pepper, seeded and finely chopped

Spices

  • 1 Tbsp Chili powder
  • 1 tsp Ground cumin
  • 1 tsp Smoked paprika
  • 1 tsp Ground oregano

Main Ingredients

  • 29 oz Canned diced tomatoes, fire-roasted
  • 15 oz Canned black beans, rinsed and drained
  • 12 oz Uncooked 93% lean ground turkey
  • 1 cup Frozen corn kernels
  • 3 cups Canned chicken broth

Instructions
 

Preparation & Cooking

  • Heat olive oil in a large pot over medium heat.
  • Add the chopped onion and green pepper. Cook until tender, about 5 minutes.
  • Add finely chopped garlic and jalapeño. Cook for another 2 minutes, stirring frequently.
  • Add the lean ground turkey, breaking it up as it cooks, until no pink spots remain, about 3-4 minutes.
  • Sprinkle in the chili powder, cumin, smoked paprika, and oregano. Stir for about 1 minute.
  • Add the chicken broth and diced tomatoes. Bring to a boil.
  • Reduce heat and let the soup simmer for about 30 minutes.
  • Skim off any excess fat from the surface.
  • Add rinsed black beans and frozen corn. Stir until everything is warmed through, about 5 minutes.
  • Serve hot, topping with your favorite taco toppings.
