Preparation

  • Heat a large pot over medium heat and add the chopped onions, carrots, and celery. Cook for about 5 minutes until tender and fragrant.
  • Add the minced garlic and cook for an additional minute, stirring to prevent burning.
  • Incorporate the chopped cabbage and green peppers into the pot. Stir regularly for around 5 minutes until they start to soften.

Cooking

  • Pour in the diced tomatoes along with their juices, then add the vegetable broth.
  • Season with thyme, basil, salt, and pepper. Stir to mix thoroughly.
  • Bring the soup to a rolling boil, reduce the heat to low, cover, and let it simmer for 30 to 40 minutes, stirring occasionally until vegetables are tender.
