  • 1 cup cottage cheese Use good quality cottage cheese for the best flavor.
  • 1 cup all-purpose flour Can substitute with gluten-free flour for a gluten-free option.
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon Italian seasoning
  • 1 tablespoon olive oil

For the toppings

  • Your choice pizza sauce Use your favorite pizza sauce.

  • as needed grated cheese (like mozzarella or cheddar) Can mix different cheeses for more flavor.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a mixing bowl, combine the cottage cheese, all-purpose flour, baking powder, salt, garlic powder, and Italian seasoning. Mix well.
  • Add the olive oil to the mixture and stir until combined. If the dough is too sticky, sprinkle a little more flour.
  • On a lightly floured surface, roll out the dough to your desired thickness for the flatbread.
  • Place the rolled dough on a baking sheet lined with parchment paper.
  • Spread your choice of pizza sauce over the surface of the dough, leaving a small border around the edges.
  • Top with fresh vegetables and grated cheese.

Baking

  • Place in the preheated oven and bake for about 15-20 minutes, or until the edges are golden brown and the cheese is bubbling.
  • Remove from the oven and let cool slightly before garnishing with fresh herbs.
  • Slice and serve hot!
