Preparation

  • Begin by peeling the sweet potatoes and cutting them into chunks.
  • Boil the sweet potato chunks in a pot of water until they are soft and fork-tender, usually about 15-20 minutes.
  • Drain the sweet potatoes and allow them to cool slightly.
  • Mash the sweet potatoes in a mixing bowl until smooth and creamy, ensuring there are no lumps.
  • Gradually add the all-purpose gluten-free flour to the mashed sweet potatoes, stirring until a dough forms.
  • If the dough feels too sticky, add a little more flour until it becomes manageable.
  • Divide the dough into equal portions and roll each portion into a ball.
  • Flatten each ball into a tortilla shape using your hands or a rolling pin, making them about 1/8 inch thick.

Cooking

  • Preheat a non-stick skillet over medium heat.
  • Cook each tortilla for about 2-3 minutes on each side until golden brown and slightly crispy.
  • Keep the cooked tortillas warm in a towel while you prepare the rest.
