Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar (or coconut sugar) Can substitute with coconut sugar for a lower glycemic index.
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 cup almond milk (or any non-dairy milk) Other options include soy or oat milk.
  • 1/2 cup vegetable oil (or melted coconut oil) Can substitute with unsweetened applesauce.
  • 1/2 cup fresh orange juice Freshly squeezed is best.
  • Zest of 1 large orange Essential for enhancing orange flavor.
  • 1 tablespoon apple cider vinegar Helps with leavening.

Optional

  • powdered sugar for dusting For decorative finishing.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a round cake pan or line it with parchment paper.
  • In a large mixing bowl, sift together the flour, sugar, baking powder, baking soda, and salt until well combined.
  • In another bowl, whisk together the almond milk, vegetable oil, fresh orange juice, orange zest, and apple cider vinegar.
  • Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.

Baking

  • Pour the batter into the prepared cake pan and smooth the top with a spatula.
  • Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • Once baked, allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
