Ingredients
  

  • 1 cup unsalted butter softened (2 sticks)
  • 1 cup light brown sugar packed
  • 1 ¾ cups all-purpose flour
  • 1 ½ cups quick or old-fashioned oats
  • ½ tsp baking soda
  • ½ tsp salt
  • 16 oz chopped pitted dates (2 packages)
  • ¼ cup sugar
  • 1 ½ cups water

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a medium bowl, mix the flour, oats, baking soda, and salt. Set aside.
  • In a large bowl, cream the softened butter and brown sugar until light and fluffy.
  • Gradually add the dry mixture to the wet ingredients, mixing until crumbly.
  • In a saucepan, combine chopped dates, sugar, and water. Cook over low heat for about 10 minutes until thickened.
  • Press half of the crumb mixture into a greased 9x13-inch pan to form the base layer.
  • Spread the warm date filling over the base layer evenly.
  • Crumble the remaining crumb mixture over the date filling and gently pat down.
  • Bake for 25 to 30 minutes until golden brown.
  • Cool for 15 minutes in the pan before cutting into bars.
