  • 2 lbs sirloin steak, cut into 1½-inch cubes Choose good-quality steak for best flavor and texture.
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 2 tbsp olive oil For searing the steak.
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1 cup beef broth Low-sodium recommended for controlling saltiness.
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • lbs baby potatoes, halved
  • to taste Fresh parsley for garnish (optional)

Instructions
 

Preparation

  • Season the cubed sirloin steak with salt, black pepper, garlic powder, and onion powder. Let it sit for 5 minutes.
  • Heat olive oil in a large skillet over medium-high heat. Once shimmering, add steak cubes and sear each side for 2-3 minutes.
  • Transfer the seared steak to the crockpot.
  • In the same skillet, add the diced onion and sauté for 3-4 minutes until translucent. Add minced garlic and cook for an additional 30 seconds.
  • Pour in beef broth, scraping up browned bits from the skillet. Stir in Worcestershire sauce and dried thyme, then pour over steak in the crockpot.
  • Add halved baby potatoes to the crockpot and gently stir to coat with the mixture.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours.

Serving

  • Once cooking is complete, taste and adjust seasoning with salt and pepper as needed.
  • Garnish with fresh parsley and serve in bowls.

Notes

For a creamier version, add heavy cream or cream of mushroom soup during the last hour of cooking. You can also adapt this recipe with other cuts of beef.
