Ingredients
  

Main Ingredients

  • 1 lb Italian sausage Choose good quality sausage for best flavor.
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth Vegetable broth can be used for a vegetarian version.
  • 4 medium potatoes, diced Fresh potatoes are recommended.
  • 1 cup kale, chopped Use fresh kale for better flavor.
  • 1 cup heavy cream Can substitute with half-and-half or milk.
  • Salt to taste
  • Pepper to taste

Instructions
 

Cooking the Sausage

  • In a large pot over medium heat, cook the Italian sausage, stirring occasionally for 5-7 minutes until browned. Remove and set aside.

Sautéing Vegetables

  • In the same pot, add chopped onion and minced garlic. Sauté for 3-4 minutes until translucent.

Cooking Potatoes

  • Add diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 10-15 minutes until potatoes are tender.

Final Touches

  • Add chopped kale and cooked sausage back to the pot. Simmer for an additional 5 minutes.
  • Stir in heavy cream and season with salt and pepper. Warm for another minute before serving.

Notes

For a vegetarian version, replace sausage with plant-based sausage and use vegetable broth. This soup keeps well and can be stored in the fridge for 3-4 days or frozen for up to 3 months.
