Ingredients
  

For the Dough

  • 2 cups all-purpose flour Make sure to use high-quality flour
  • 1 teaspoon salt Enhances flavor
  • 1 teaspoon sugar To activate yeast
  • 1 packet active dry yeast (2 1/4 teaspoons) Ensure yeast is fresh
  • 3/4 cup warm water Temperature is important for yeast activation
  • 1 tablespoon olive oil Adds richness to the dough

For the Filling

  • 1/2 pound ground beef or your choice of meat Can substitute with chicken or vegetables
  • 1 small onion, finely chopped Adds flavor to the filling
  • 1 piece bell pepper, diced Use any color preferred
  • 1 teaspoon paprika For flavor and color
  • 1 teaspoon black pepper To taste
  • 1/2 teaspoon cumin Adds warmth to the filling
  • 1 tablespoon fresh parsley, chopped (optional) For fresh flavor
  • 1 egg beaten (for egg wash) Gives a golden finish

Instructions
 

Preparation of Dough

  • In a small bowl, dissolve sugar and yeast in warm water. Let it sit for about 5 to 10 minutes until it becomes frothy.
  • In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil.
  • Mix until the dough begins to come together, then knead for about 5-7 minutes on a floured surface until smooth.
  • Place the dough in an oiled bowl, cover it with a towel, and let it rise in a warm area for about 1 hour or until it doubles in size.

Preparation of Filling

  • While the dough rises, heat a skillet over medium heat. Add the ground meat, onion, bell pepper, paprika, black pepper, and cumin.
  • Cook until the meat is browned and the vegetables are tender. Add chopped parsley if using. Set aside to cool.

Assembling and Baking

  • Preheat your oven to 475°F (245°C).
  • Once the dough has risen, punch it down and divide it into two equal pieces. Roll out each piece into an oval shape, about 1/4 inch thick.
  • Place the filling along the center of each oval, leaving space on the edges. Fold the sides of the dough over the filling, pinching to create the signature pide shape.
  • Brush the top of each pide with the beaten egg for a golden finish.
  • Bake in the preheated oven for 12-15 minutes, or until the crust is golden brown and crispy.
  • Remove from the oven and let cool slightly before slicing and serving.

Notes
