  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth

  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Olive oil for cooking

Preparation

  • Gather all your ingredients on the counter.
  • In a large pot, heat about a tablespoon of olive oil over medium heat.
  • Add the chopped onion and minced garlic, sauté until the onions turn translucent and tender (about 3 to 4 minutes).
  • Introduce the ground turkey into the pot, breaking it up with a spatula and cooking until browned evenly (about 5 to 7 minutes).
  • Sprinkle in the cumin and chili powder, stirring for about one minute to release their aroma.
  • Add the diced tomatoes, white beans, and chicken broth into the pot, stirring to combine.
  • Increase heat slightly to bring to a gentle simmer, then reduce heat and cover the pot. Let it cook for 20 to 25 minutes.
  • Taste and season with salt and pepper according to preference before serving.

Notes
