Ingredients
  

Main Ingredients

  • 2 cups cooked turkey, shredded Leftover turkey works great.
  • 1 cup cooked rice White rice is traditional, but brown or wild rice can be used.
  • 1 medium onion, chopped
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 4 cups chicken or turkey broth Homemade broth is preferred for better flavor.

Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • to taste salt and pepper Start with a small amount and adjust to preference.
  • 1 tablespoon olive oil For sautéing vegetables.

Garnish

  • to taste fresh parsley, for garnish Optional, for added color and flavor.

Instructions
 

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion, diced carrots, and diced celery, sauté for 5–7 minutes until softened.
  • Stir in garlic powder and dried thyme, cooking for an additional minute.

Cooking

  • Pour in the chicken or turkey broth and bring to a boil.
  • Reduce heat to a gentle simmer and add shredded turkey and cooked rice.
  • Season with salt and pepper, adjusting to taste.
  • Allow to simmer for 10 to 15 minutes to blend flavors.

Serving

  • Ladle soup into bowls and garnish with fresh parsley if desired.

Notes

Great for using up leftover turkey. Can customize with other vegetables or grains. For creaminess, add a splash of heavy cream before serving.
