  • 1 lb ground turkey Lean protein option
  • 1 can (15 oz) diced tomatoes Use canned with juices
  • 1 can (15 oz) kidney beans, rinsed Can use other beans as well
  • 1 medium onion, chopped Adds flavor base
  • 1 red bell pepper, chopped red bell pepper, chopped For color and crunch
  • 2 tbsp chili powder Adjust according to spice preference
  • 2 cloves garlic, minced Adds depth of flavor
  • 1 tsp cumin For earthy flavor
  • to taste Salt and pepper Season as desired
  • 2 tsp olive oil For sautéing vegetables

Instructions
 

Preparation

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onions and red bell peppers to the pot, sauté for about 5 minutes until soft.
  • Increase heat slightly, add ground turkey, and cook for about 8 minutes, stirring occasionally until browned.
  • Add minced garlic, chili powder, cumin, and a sprinkle of salt and pepper. Cook for an additional minute.
  • Add diced tomatoes with juices and rinsed kidney beans, and mix thoroughly.
  • Bring the mixture to a gentle simmer, then reduce heat to low, cover, and let simmer for at least 30 minutes, stirring occasionally.

Serving

  • Serve hot in bowls. Garnish with shredded cheese or fresh herbs, if desired.
