  • 1 teaspoon ground cinnamon For warmth in flavor
  • 1/2 cup ground almonds or hazelnuts Adds nuttiness to the dough
  • 1/4 teaspoon salt Balances sweetness

Filling and Finishing

  • 1/2 cup raspberry or apricot jam Choose your preferred flavor
  • To taste powdered sugar for dusting Optional decorative touch

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a large mixing bowl, cream the softened butter and powdered sugar until light and fluffy, about 3-4 minutes on medium speed.
  • Add the egg, vanilla extract, and ground cinnamon, mixing until well combined.
  • Gradually sift in the flour, ground nuts, and salt, stirring with a wooden spoon or spatula until the dough begins to come together.
  • Divide the dough in half, shape each into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes to firm up.

Baking

  • Once chilled, roll out one disk of dough to about 1/4 inch thick on a floured surface.
  • Cut out shapes with cookie cutters, ensuring half have a small cutout for the jam to show through.
  • Place the cut cookies on the prepared baking sheets and bake for 10-12 minutes or until lightly golden.
  • Cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.

Assembly

  • Spread a small amount of jam on the solid cookie shapes and top with the cut-out cookies.
  • Dust with powdered sugar if desired before serving.
