Ingredients

  • 1 pound penne pasta
  • 1 block cream cheese, softened Ensure it's at room temperature for easier mixing.
  • 1 container Trader Joe's lobster bisque
  • 1 package Trader Joe's frozen langostino tails, thawed
  • 1 cup cherry tomatoes, halved Adds freshness to the dish.
  • 1/2 stick butter For greasing the baking dish.
  • 3 cloves garlic, minced Enhances flavor.
  • 1 cup Kraft creamy mozzarella cheese For topping.
  • Salt and pepper to taste Adjust as desired.
  • Lemon wedge For serving.

Instructions
 

Preparation

  • Boil a large pot of lightly salted water.
  • Add the penne and cook according to package instructions (about 11 minutes) until tender but firm.
  • Drain the pasta and return it to the pot.
  • Mix in the softened cream cheese and lobster bisque over medium-high heat, season with salt and pepper, and stir until well combined.

Baking

  • Preheat your oven to 350°F (175°C).
  • Place the half stick of butter in a 9x13 baking dish and put it in the oven to melt.
  • Once melted, take the baking dish out and add the thawed langostino tails and minced garlic, tossing until fragrant.
  • Add the penne mixture and halved cherry tomatoes to the baking dish, tossing to mix.
  • Sprinkle creamy mozzarella cheese on top and bake for 10 to 15 minutes until cheese is melted and dish is bubbly.
  • Garnish with a squeeze of fresh lemon juice and serve.

Notes

For a gourmet touch, mix in truffle oil or gourmet cheeses. You can also add breadcrumbs mixed with herbs for a crunchy topping.
